It's still a good time to think about fresh peaches. Peaches from California are stocked in supermarkets now. However, because of the long packaging and shipping times, their quality is often hit and miss. But it isn't hard to find ripe peaches with terrific flavor. In a few more weeks from now, local peaches grown around the country will start to ripen nicely, and fill the shelves of markets everywhere. How many of us haven't been experimenting with Peach Cobbler recipes for a while? Well, this recipe is the result of all of that experimentation, and is both delicious and enjoyed by all. We owe ourselves the pleasure of experiencing peaches in the prime of their summertime flavor as much and in as many ways as possible. Peach cobbler is among the most commonly used and most time tested ways of doing this. To make a great peach cobbler, you will need the following ingredients: eight fresh peaches carefully peeled, pitted and sliced into thin wedges; one-quarter cup brown sugar; one-quarter cup white sugar; one-half teaspoon table salt; one-eighth teaspoon ground nutmeg; one-quarter teaspoon ground cinnamon; one teaspoon fresh lemon juice; two teaspoons cornstarch; one cup all-purpose flour; one teaspoon baking powder; six tablespoons chilled, unsalted butter cut into small cubes; and one-quarter cup of boiling water. Next, mix one teaspoon of ground cinnamon with three tablespoons of white sugar. To prepare Peach Cobbler from scratch, first preheat the oven to 425 degrees F (220 degrees C). Place the following ingredients in a big mixing bowl: fresh peaches, 1/4 cup white sugar, 1/4 cup brown sugar, and 1/4 teaspoon each of cinnamon, nutmeg, lemon juice and cornstarch. Stir until they are combined. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes. Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Add water until the ingredients are mixed together. Take the peaches out of the oven, and drizzle the topping over them with a spoon. Sprinkle your spice mixture over the top of the whole dish. Bake it until the surface is golden brown, for half an hour. Now, your Peach Cobbler will be ready to eat!

The time is approaching when we should start thinking about fresh peaches. Some super markets are already stocking ripe California peaches. However, their quality is a little uneven as they were picked early, and then shipped to far away places. However, soon we will see the shelves of supermarkets and farmers markets everywhere crowded with ripe, delicious peaches.
